1 cup quinoa 1 cucumber 2 tomatoes 1 shallot 1 lemon's juice 20 leaves of mint Olive oil salt Cook the quinoa for 15 minutes in boiling water. Once cooked, chill it by rinsing it in cold water and let it drain into a colander. While the quinoa is cooking , rinse the tomatoes , remove the seeds and juice and cut the tomatoes into tiny cubes. Peel the half cucumber , remove the seeds and cut it in small cubes. Cut very finely mint and shallot . Mix all the vegetables with cold quinoa.
